Egg Baked Inside a Sweet Potato Topped With Bacon!




This idea is so yummy, healthy and it can be eaten at any time of the day.

It can be breakfast, lunch, dinner or snack. I had it as  an evening meal served with vegetables and was extremely tasty and very filling!

  • So simply cut your sweet potato in halves. 
  • Place it on a tray and bake for 40 minutes at 200 degrees Celcius
  • Take sweet potato out of the oven and smash it down so you make space for the egg
  • Crack the egg and place inside of the sweet potato as shown below:



  •  Put back in the oven
  • Bake for about 15 minutes
  • Add sea salt and pepper
  • Or as I did add some bacon without the fat
  • Serve with vegetables, salad or sautéed spinach!
So delicious! enjoy!

Strawberry & chia jam



This jam is so handy to have for quick snacks, to spread over whole meal slice of bread, add on top of oatmeal or spread over a banana for an extra yummy snack!

 And the best thing it does last 2 - 3 weeks so you can make a batch to have ready for the next few weeks!

Ingredients:

2 1/2 cups of strawberries
1 tablespoon of chia
few drops of lemon or lime



Step 1:

chop up your strawberries, measure them and place them in a sauce pan

Step 2:

turn on the heat to a medium heating and wait until they become mushy (about 4 minutes). See picture above.

Step 3:

Blend them

Step 4:

Bring back to the boil and let them boil for 5 minutes. We want to let some of the liquid to evaporate but we can't boil for too long because the natural pectin of the fruit will evaporate. Pectin is the thickener that gives jam the consistency and fruit itself contains pectin and so does lemon so thats why we will add a few drops to it.

At this point add the chia and remove it from the heat.




Final step:

Place jam in a container and wait until it cools down. At this point it might not seem thick enough, but it will thicken upon standing .

Once is cooled store in the fridge.

3 ingredient oatmeal bread



Yes as easy as it sounds, this bread can be made with only 3 ingredients. However in my opinion is much nicer with the add ons mention below. Don't get me wrong if you wanted to do it with only the 3 ingredients is still fluffy, delicious and most important very healthy!



So here is picture with 3 ingredients:
oats, greek yogurt and bicarbonate of soda.

You don't even have to do it in a food processor. a bowl, a good spoon and a strong arm will do the job. It does get hard as with greek yogurt mixture is a bit too thick but don't worry is still perfect. You can a drop of almond milk to make things a bit easier if you wish. I didn't add any and came out perfect.

So add in a bowl the yogurt, the re-fill the empty pot of 500 grams of oats and do this step twice.

Once you have mix the 3 ingredients very well put the mixture inside a 2lb bread tin and bake for 180 degrees Celsius for 30  minutes. Remember your oven must be previously preheated. 


I added a tablespoon of the following:
- sunflower seeds
- pumpking seeds
- sesame seeds

If you wish to give it a sweet touch to it you can add honey as well.

Bread came out perfectly and my husband and kids loved it. Next time I make it I would definitely add a pinch of salt.

Slow Cooked Mexican Style Chicken


Slow Cooked Mexican Style Chicken



This dish is delicious and perfect to make on a Friday to have lunches for the whole weekend done so you have more free time to do other things.

You can make tacos on wholemeal wraps as shown below or serve in a burrito bowl with rice, beans, lettuce, onion etc.

So first step is to sauté all vegetables you have left from the week. I used onion, leeks, tomato, yellow pepper, red onion. Vegetables not only add flavour and nutrition they add volume and you get to use all left over vegetables from the week so nothing goes to waste.


After sautéing them for a while add the passata sauce. I probably have said it many times but this passata is delicious and is 99% tomatoes as supposed to tomato cans whack are maximum 60% tomatoes and the rest is sugar, salt and conservative. In some cases vegetable oil. Plus is delicious:


Then add a jar of chipotle chilli sauce it gives it a very nice kick. If you don't like any type of spicy food you can add some del paso salsa or just avoid it.


 Then add 6 to 8 pieces of chicken breast without skin, put a lid on and let them cook for about 2 hours on a very slow heat.


Once cooked just shred chicken with 2 forks until is very well shredded:


You can then place in the middle of the table with taco toppings such as lettuce, onion, beens, rice, cheese and whole meal wraps! 

I made this last weekend and making them again this one and I am already looking forward to have them!

So today I wanted to make some protein balls to have healthy snacks over the weekend but I didn't have any nut butter so I couldn't make them but I had almonds so I decided to make my own almond butter to make my protein balls tomorrow.

I always keep nut butters in the press as they are so handy to have quick snacks or make healthy little treats for all the family!

Ingredients:

2 cups of raw almonds

How to get in shape for an event or holidays?


First of all I want to share the story of my dress. I spent quit a long time looking at dresses to try to get what I wanted. When I say this dress on www.net-a-porter.com I completely fell in love with it. It kind of looked like the dress Kim K wore on her hen (bachelorette party) from Balmain. 

So after I spent a few days convincing husband to get it (it was a bit too expensive) I did got it. The website advised to buy a size bigger as dress is s very small fit. But after killing myself on the gym the last year, making sacrifices on foods etc I was like: "I'm no getting a size 10 sure I'm fit, sure I've been very hungry of fatty foods so for sure will get into size 8, if not I exchange it"...

Well dress arrived in a beautiful box, tried on that day and what happened? zipper wouldn't go up. NOOOOOO! WHAAAT? zipper would not even close? that is crazy small! what am I going to do? and hubby in the back: " come on you won't be comfortable, you won't loose weight you look already good, you better exchange it before the 28 days given as Im not losing the money, bla bla bla"...

Well at that point I was like I'm after loosing a lot of weight! can I lose more? Will I have the will power to do it? The truth is I wanted to be comfortable on the day so decided I was gonna exchange it for size 10. When I went back to do so, the dress was sold out on all sizes. *crying face* 

So husband was like, get the refund and get a different dress. NO! I wanted that one! So decided to put all the discipline in the next 6 weeks to fit into the dress! so I did it, I made it and here is what I did to do so, so maybe some of my tips will help you get into that bikini or dress soon!

(dress is from a brand called Needle & Thread and although is sold out, you'll fin very similar ones either on net-a-porter or asos)

- First of all I reduced my carbohydrates to twice a day the first few weeks, once the last few.
- drank 2-3 litters of water
- exercised 4 to 6 times a week: which involved 3 times Kaylas guide (resistance exercises) the rest running 5 kilometres
- Be consistent
- Have snacks! If you don't have snacks you will be hungry and give up.
- one cheat meal a week first few weeks. No cheat meal the previous 2 weekends before the wedding.
- Did the tiny tea teatox for 14 days which helped me with bloating immensely. This tea is awesome when preparing for an event. Have in mind this tea is not magic potion, it only assist you as long as you put the hard work yourself.

WAIST TRAINNER REVIEW:
-Used the wait trainer for full 6 weeks and lost 3 inches of my waist. I know many of you will think that It only happened because I was cutting calories and exercising. But the waist trainer is not just about losing weight! Is about helping you to keep everything in position. You do feel very confident wearing it!

Also I have read a lot of stories saying it would hurt your organs. Well this would only happen if you are a size 16 and buy a size 12 and really squeeze yourself into it. I you buy your own size it works as a belt, keep fat in place and give you sensation of a flat tummy.

Although I would not wear it at all times for ever, just when going somewhere to keep tummy in or a few weeks before an event. 

The only exercise I personally recommend to do with it is walking at a fast pace or light weights. Anything heavier do it with the comfort of freedom so you do your exercises properly
